Fresh Watermelon Mint Feta Salad with Tajín and Lime

A fresh, vibrant, and easy-to-make summer salad combining juicy watermelon, fresh mint, salty feta, smoky Tajín, and bright lime juice. Perfect for quick gatherings and outdoor dining.

  • 4 cups seedless watermelon, cut into bite-sized cubes
  • 1/4 cup fresh mint leaves, chopped
  • 1 cup crumbled feta cheese
  • 12 teaspoons Tajín seasoning
  • Juice of 1 large lime (about 2 tablespoons)
  • 1 tablespoon extra virgin olive oil (optional)
  • Optional add-ins: handful of arugula or baby spinach, toasted pepitas

Instructions

  1. Cut about 4 cups (600 g) of seedless watermelon into bite-sized cubes and place in a large mixing bowl.
  2. Remove mint leaves from stems and finely chop about 1/4 cup (10 g). Add to the watermelon.
  3. Crumble 1 cup (150 g) of feta cheese into the bowl with watermelon and mint.
  4. Sprinkle 1 to 2 teaspoons (5-10 g) of Tajín evenly over the salad.
  5. Squeeze the juice of 1 large lime (about 2 tablespoons or 30 ml) over the salad.
  6. Add 1 tablespoon (15 ml) of extra virgin olive oil, if using, and toss gently to combine without breaking the watermelon cubes.
  7. Taste and adjust by adding more Tajín or lime juice if desired.
  8. Serve immediately or chill for up to 1 hour before serving to let flavors meld slightly. Avoid longer chilling to prevent excess juice.

Notes

Use ripe watermelon with a creamy yellow spot for best sweetness. Chop watermelon uniformly for balanced bites. Fresh mint is essential for bright flavor; basil or cilantro can be used as alternatives. Assemble close to serving time to avoid watery salad. Drain excess watermelon juice if very juicy. For vegan option, replace feta with vegan cheese or seasoned tofu. Tajín can be substituted with chili powder, salt, and lime juice.
