A quick and refreshing summer salad combining juicy watermelon, salty feta, fresh mint, and a sweet tangy honey balsamic glaze. Perfect for gatherings or a light meal.

  • 4 cups seedless watermelon, cut into bite-sized cubes
  • 1 cup feta cheese, crumbled
  • ½ cup fresh mint leaves, roughly chopped
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon extra virgin olive oil (optional)
  • Freshly ground black pepper, to taste
  • Pinch of sea salt

Instructions

  1. Cut about 4 cups (about 600g) of seedless watermelon into bite-sized cubes.
  2. In a small saucepan over medium-low heat, combine 2 tablespoons of honey and 2 tablespoons of balsamic vinegar. Stir gently and let it simmer until it thickens slightly, about 5 minutes. Remove from heat and stir in 1 tablespoon of extra virgin olive oil for a smooth finish.
  3. Roughly chop about ½ cup of fresh mint leaves and crumble 1 cup of feta cheese.
  4. In a large bowl, gently toss the watermelon cubes with the crumbled feta and chopped mint.
  5. Drizzle the honey balsamic glaze over the salad. Sprinkle a pinch of sea salt and freshly ground black pepper to taste. Toss gently to coat everything evenly.
  6. Let the salad sit for about 5 minutes before serving to allow flavors to mingle.

Notes

If watermelon is very juicy, drain some liquid before adding glaze to avoid watery salad. Let feta come to room temperature before mixing for better flavor. The glaze can be made without cooking by shaking honey, balsamic vinegar, and olive oil in a jar, though simmering yields richer flavor. Serve soon after preparation for best texture.
