A simple, refreshing summer charcuterie board featuring juicy watermelon cubes paired with salty feta cheese, fresh mint, toasted almonds, and optional accompaniments for a crowd-pleasing, easy-to-assemble dish.

Ingredients

  • Seedless watermelon, cut into bite-sized cubes or wedges
  • Feta cheese, crumbled or cut into small chunks
  • Fresh mint leaves, washed and torn
  • Almonds, whole or sliced, toasted
  • Cucumber, thinly sliced rounds or ribbons (optional)
  • Honey or balsamic glaze, light drizzle
  • Olives, pitted Kalamata or green olives (optional)
  • Crackers or toasted baguette slices

Instructions

  1. Rinse the watermelon under cool water. Pat dry, then cut into 1-inch bite-sized cubes or wedges.
  2. Cut the feta into small chunks or crumble gently with your fingers.
  3. Wash and thinly slice the cucumber into rounds or ribbons if using.
  4. Heat a dry skillet over medium heat. Add almonds and toast, stirring frequently, until golden and fragrant, about 3 to 5 minutes. Remove from heat and let cool.
  5. Arrange watermelon chunks and feta in clusters on a serving board or platter. Place cucumber slices and olives in small piles around the board. Scatter toasted almonds and fresh mint leaves evenly across everything.
  6. Lightly drizzle honey or balsamic glaze over the watermelon and feta. Serve immediately or chill for up to an hour before guests arrive.

Notes

Keep feta chilled until just before assembling to maintain texture. Toast nuts in small batches over medium-low heat and stir constantly to avoid burning. Assemble just before serving or keep components separate to prevent sogginess. Drizzle honey or balsamic glaze lightly to balance flavors. For vegan option, substitute feta with marinated tofu and honey with agave syrup.
