  • 6 oz fresh sliced turkey breast
  • 2 slices whole grain sandwich bread or artisan bread, lightly toasted
  • Crisp lettuce leaves (romaine or butter lettuce)
  • 2 medium-sized ripe tomatoes, sliced
  • 34 slices crispy cooked bacon
  • 2 tbsp mayonnaise (light mayo optional)
  • 1 tsp Dijon mustard
  • Salt and freshly ground black pepper, to taste
  • Fresh strawberries, hulled and halved
  • Seedless grapes (red or green)
  • 1 cup fresh pineapple chunks
  • Kiwi slices, peeled and cut into bite-size pieces
  • Wooden or reusable metal skewers
  • Optional extras: avocado slices, pickles or dill slices, gluten-free bread or wraps, dairy-free mayo

Instructions

  1. Wash all fresh produce thoroughly. Slice tomatoes into 1/4 inch thick slices. Rinse and pat dry lettuce leaves. Cook bacon to preferred crispness and drain on paper towels.
  2. Lightly toast 2 slices of bread until golden and crisp.
  3. Spread 1 tablespoon mayonnaise on one slice of bread and 1/2 teaspoon Dijon mustard on the other. Layer turkey breast evenly over mayo side, add bacon strips, tomato slices, and lettuce leaves. Season with salt and pepper. Add optional avocado or pickles if desired. Top with the other slice of bread.
  4. Thread fruit pieces onto skewers, alternating colors and textures (e.g., grape, pineapple chunk, strawberry half, kiwi slice) until skewer is full but not overcrowded.
  5. Place the turkey club sandwich in one compartment of the bento box and the fruit kabobs in another. Add optional nuts or yogurt cup if desired.
  6. Close the lid securely and refrigerate if not eating immediately. Enjoy fruit kabobs fresh for best juiciness.

Notes

Toast bread lightly to prevent sogginess. Layer wet ingredients inward and crispy ingredients on top to maintain texture. Use firm but ripe fruit for kabobs.
