  • English cucumbers (firm, sliced into 1/4-inch rounds)
  • 8 ounces full-fat cream cheese, softened to room temperature
  • 2 tablespoons fresh dill, finely chopped
  • 1 teaspoon fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • Thinly sliced smoked salmon, cut into 1.5-inch pieces
  • Capers (optional, for garnish)

Instructions

  1. Wash and dry the cucumbers. Using a mandoline or sharp knife, slice them into 1/4-inch thick rounds. Set aside on a paper towel to absorb excess moisture for about 5 minutes.
  2. In a medium bowl, combine softened cream cheese with chopped fresh dill, lemon juice, salt, and pepper. Mix thoroughly until smooth and creamy. If too stiff, stir in a splash of milk or cream.
  3. Spread or pipe a dollop of the dill cream cheese onto each cucumber slice using a spoon or piping bag.
  4. Cut smoked salmon into bite-sized pieces, fold or curl each piece, and place atop the cream cheese on each cucumber round.
  5. Garnish each bite with a small sprig of dill or a few capers for color and flavor.
  6. Arrange the bites on a platter and chill for 10-15 minutes before serving to let flavors mingle and keep cucumbers crisp.
