A vibrant and easy-to-make Mediterranean mezze platter featuring ultra-smooth creamy hummus paired with fresh veggies, olives, feta, and warm pita bread. Perfect for entertaining or a simple, flavorful meal.

  • 1 ½ cups (240g) cooked chickpeas (canned, rinsed well)
  • ¼ cup (60ml) fresh lemon juice (about 1 large lemon)
  • ¼ cup (60ml) tahini
  • 1 small garlic clove, minced
  • 2 tablespoons (30ml) extra virgin olive oil, plus more for drizzling
  • ½ teaspoon ground cumin
  • Salt to taste (start with ½ teaspoon)
  • 23 tablespoons (30-45ml) cold water or aquafaba
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced into rounds or sticks
  • 1 cup mixed olives (Kalamata and green)
  • ½ cup crumbled feta cheese (optional)
  • Fresh parsley or mint leaves for garnish
  • Warm pita bread or flatbread, cut into triangles

Instructions

  1. If using canned chickpeas, rinse them well under cold water and drain thoroughly. Optionally peel skins off a few chickpeas for a smoother texture.
  2. In a food processor, combine tahini and fresh lemon juice. Process for about 1 minute until creamy and whipped.
  3. Add minced garlic, ground cumin, and salt to the tahini mixture. Blend for 30 seconds, scraping down sides as needed.
  4. Add chickpeas in batches to the food processor. Blend for 1 minute, scrape sides, then continue blending for 2–3 minutes until mostly smooth.
  5. Slowly add cold water or aquafaba one tablespoon at a time until the hummus reaches a creamy, spreadable consistency.
  6. With the processor running, slowly drizzle in 2 tablespoons of olive oil. Taste and adjust salt or lemon juice as desired.
  7. Chill the hummus in the fridge for 10 minutes.
  8. While chilling, wash and slice cherry tomatoes and cucumber. Arrange them on a serving platter with olives, crumbled feta, and pita bread triangles.
  9. Spoon the hummus into a bowl or directly onto the platter. Drizzle with extra olive oil and garnish with fresh parsley or mint leaves.

Notes

Peeling chickpeas improves hummus texture but is optional. Blend tahini and lemon juice first for light, fluffy hummus. Add water or aquafaba slowly to adjust consistency. Chill hummus for at least 10 minutes to meld flavors. Serve pita bread separately and warm before serving to avoid sogginess.
