  • 2 cloves garlic, minced

  • Juice of 1 lemon
  • 1/4 teaspoon red pepper flakes (optional)
  • Freshly ground black pepper, to taste
  • 1 cup cherry tomatoes (about 150 g), halved
  • 1 tablespoon olive oil
  • Salt, to taste
  • Fresh basil leaves, torn (optional)
  • Grated Parmesan cheese (optional)
  • Toasted pine nuts (optional)

Instructions

  1. Wash and dry the zucchini. Using a spiralizer, create noodles and place them in a colander. Sprinkle with a pinch of salt and toss gently. Let them sit for 10 minutes to release excess water. Then, gently squeeze the noodles with a clean kitchen towel or paper towel to remove more moisture.
  2. Preheat your oven to 400°F (200°C). Toss halved cherry tomatoes with olive oil and a pinch of salt on a baking sheet. Roast for about 10 minutes, or until skins start to blister and they smell sweet and caramelized.
  3. In a large nonstick skillet over medium heat, melt butter. Add minced garlic and cook for about 1 minute until fragrant but not browned. Stir in lemon zest and red pepper flakes if using.
  4. Add the squeezed zucchini noodles to the skillet. Toss gently and cook for 2-3 minutes, just until noodles are tender but still have a bite. Pour in lemon juice and season with black pepper. Toss again to coat evenly.
  5. Remove from heat. Fold in the roasted cherry tomatoes carefully to avoid breaking them up. Taste and adjust seasoning if needed.
  6. Plate the noodles and garnish with torn fresh basil, grated Parmesan, and toasted pine nuts if desired. Serve immediately.
