  • 2 teaspoons (8g) baking powder

  • 2 tablespoons (25g) granulated sugar
  • 1ยพ cups (420ml) buttermilk, room temperature
  • 2 large eggs, room temperature
  • ยฝ cup (115g) unsalted butter, melted and slightly cooled
  • 1 teaspoon (5ml) vanilla extract
  • 1 cup (150g) fresh or frozen blueberries, thawed and drained if frozen

Instructions

  1. Preheat your star-shaped waffle iron for 5-7 minutes until fully hot.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until evenly combined.
  3. In a separate bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract until smooth.
  4. Make a well in the dry ingredients and gently fold in the wet mixture using a spatula. Stir just until combined; the batter should be lumpy.
  5. Carefully fold in the blueberries, being gentle to avoid turning the batter purple.
  6. Lightly grease the preheated waffle iron with butter or non-stick spray.
  7. Pour about ยฝ cup (120ml) batter onto the center of the iron, close the lid, and cook for 4-5 minutes or until golden brown and crisp.
  8. Use a silicone or wooden spatula to lift the waffle out and place it on a cooling rack to keep crisp.
  9. Repeat with remaining batter, greasing the iron between waffles as needed.

Notes

Do not overmix the batter; lumps are fine. Use room temperature eggs and buttermilk for best results. Preheat waffle iron fully and grease lightly between batches. Avoid opening waffle iron too early to keep waffles crisp. For extra fluffiness, separate eggs and fold in whipped egg whites last.
