  • 4 tablespoons mayonnaise (about 1 tablespoon per tortilla)

Instructions

  1. Cook the bacon: Fry 8-10 slices of thick-cut bacon over medium heat until crispy, about 8-10 minutes. Drain on paper towels and chop into small pieces. Pre-cooked bacon can be used to save time.
  2. Prepare the buffalo chicken: In a medium bowl, combine 2 cups shredded rotisserie chicken with 1/2 cup buffalo sauce, 1/4 cup ranch dressing, and a pinch of salt and pepper. Mix well to coat evenly.
  3. Lay out tortillas: Place 4 large flour tortillas on a clean surface.
  4. Assemble each pinwheel: Spread about 1 tablespoon mayonnaise evenly over each tortilla to prevent sogginess.
  5. Add fillings: On two tortillas, evenly distribute the buffalo chicken mixture. On the other two, spread chopped bacon, shredded lettuce (about 1 cup per tortilla), sliced tomatoes (1/2 cup), shredded cheddar cheese (1/2 cup), and green onions if using.
