  • 1 cup fresh corn kernels (about 2 ears) or frozen, thawed
  • 1 tablespoon olive oil
  • 1/4 teaspoon smoked paprika

  • 1 cup black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved or diced
  • 1 cup shredded lettuce or finely chopped romaine
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup sliced black olives (optional)

Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add 1 cup corn kernels, sprinkle with smoked paprika and a pinch of salt. Cook, stirring occasionally, until the kernels are golden and lightly charred, about 5-7 minutes. Remove from heat and set aside to cool.
  2. Cut and pit the avocados, scoop flesh into a medium bowl. Add lime juice and kosher salt. Mash with a fork or potato masher, leaving some chunks for texture. Stir in diced red onion, minced jalapeño (if using), and chopped cilantro. Taste and adjust seasoning if needed.
  3. In your serving dish, spread the guacamole evenly as the bottom layer.
  4. Evenly distribute the rinsed black beans over the guacamole.
  5. Scatter the cooled roasted corn kernels evenly over the beans layer.
  6. Distribute halved or diced cherry tomatoes over the corn.
  7. Sprinkle the shredded lettuce or finely chopped romaine on top.
  8. Crumble cotija cheese over the lettuce, followed by sliced black olives if desired.
  9. Cover and chill the dip for at least 20 minutes before serving to allow flavors to meld.

Notes

Use Hass avocados for best texture. Roast corn carefully to avoid dryness. Mash avocados with a fork to keep texture. Lime juice prevents browning. For vegan option, replace cotija cheese with toasted pumpkin seeds or nutritional yeast. Prepare guacamole base separately if making ahead to prevent browning.
