  • Ground cardamom โ€“ ยผ teaspoon (for filling)
  • Fresh lemon juice โ€“ 1 tablespoon
  • Cornstarch โ€“ 1 tablespoon
  • Ground cinnamon โ€“ ยผ teaspoon (optional)
  • Egg โ€“ 1 large, beaten (for egg wash)
  • Turbinado sugar or coarse sugar โ€“ 1 tablespoon (for crust)
  • Extra honey โ€“ for drizzling before serving

Instructions

  1. In a large mixing bowl, combine 1 ยผ cups sifted all-purpose flour, 1 tablespoon granulated sugar, ยผ teaspoon salt, and ยฝ teaspoon ground cardamom.
  2. Add ยฝ cup cold cubed unsalted butter and cut into the flour using a pastry cutter or fingertips until mixture resembles coarse crumbs with some pea-sized pieces.
  3. Stir in 2 tablespoons honey, then gradually add 3-4 tablespoons cold water, mixing gently until dough just comes together.
  4. Form dough into a disk, wrap in plastic, and chill for at least 30 minutes.
  5. Peel and thinly slice 4 medium peaches. Toss peaches with 3 tablespoons honey, 1 tablespoon fresh lemon juice, 1 tablespoon cornstarch, ยผ teaspoon ground cardamom, and ยผ teaspoon cinnamon if using. Set aside for 10 minutes.
  6. Roll dough on a lightly floured surface or between parchment sheets into a 12-inch circle about ยผ inch thick. Transfer to a parchment-lined baking sheet.
  7. Spoon peach mixture onto center of dough, leaving a 2-inch border. Fold edges over filling, pleating as needed, leaving center exposed.
  8. Brush dough edges with beaten egg and sprinkle 1 tablespoon turbinado sugar over crust.
  9. Bake at 375ยฐF (190ยฐC) for 35-40 minutes until crust is golden and filling bubbles. Tent with foil if crust browns too quickly.
