These turkey and cheese pinwheel roll-ups are a quick, no-cook lunchbox hero made with simple ingredients. They hold up beautifully, don’t get soggy, and are perfect for meal prep or busy mornings.

  • 8 oz cream cheese, softened to room temperature
  • 68 slices deli turkey breast, thinly sliced
  • 46 slices provolone cheese
  • 1/4 cup finely shredded lettuce or baby spinach (optional, patted dry)
  • 1 tablespoon ranch seasoning mix (optional)
  • 1 tablespoon fresh chives or green onions, finely chopped (optional)

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge about 30 minutes before starting. If forgotten, microwave in a bowl for 10-15 seconds until soft but not melted. Stir until smooth.
  2. Prep your fillings: Lay tortillas flat on the counter. Pat lettuce or spinach completely dry with paper towels. Slice turkey and cheese if not pre-sliced.
  3. Spread the cream cheese: Using a rubber spatula, spread a thin, even layer of cream cheese over the entire surface of each tortilla, going all the way to the edges. If using ranch seasoning, mix it into the cream cheese before spreading.
  4. Layer the fillings: Place turkey slices flat over the cream cheese, overlapping slightly (2-3 layers). Lay cheese slices on top. If adding greens, sprinkle evenly over the cheese.
  5. Roll it tight: Starting from one edge, roll the tortilla as tightly as possible without tearing, tucking in the filling as you go. Press gently to seal the seam at the end.
  6. Wrap and chill: Place each rolled tortilla seam-side down on plastic wrap or parchment paper. Wrap tightly, twisting the ends like a candy wrapper. Refrigerate for at least 30 minutes, or up to 24 hours.
  7. Slice and serve: Unwrap chilled rolls and place on a cutting board. Using a sharp serrated knife, slice each roll into 1-inch pinwheels using a gentle sawing motion. Serve immediately or pack into lunchboxes.

Notes

For best results, pat all ingredients dry to prevent sogginess. Chilling the rolls for at least 30 minutes is crucial for clean slices. If tortilla cracks while rolling, press the crack together and continue; it won’t be noticeable after slicing. These pinwheels taste even better the next day.
