  • 8 slices of soft white bread (or whole wheat, brioche, or your favorite sandwich bread)
  • ½ cup sunflower seed butter (sunbutter), creamy recommended
  • ⅓ cup strawberry jelly or jam (or grape, raspberry, apricot; seedless jam works best)
  • 2 tablespoons unsalted butter, softened (or vegan butter/coconut oil)

Instructions

  1. Flatten the bread slices: Gently roll over each slice with a rolling pin until about half its original thickness.
  2. Cut out rounds: Use a round cookie cutter (2.5 to 3 inches) or a glass rim to cut two rounds from each slice of bread.
  3. Spread the sunbutter: Take half of the bread rounds and spread a thin, even layer of sunbutter on each, leaving a ¼-inch border around the edge.
  4. Add the jelly: Drop about ½ teaspoon of jelly right in the center of the sunbutter. Do not spread to the edges.
  5. Top with remaining rounds: Place the plain bread rounds on top of the filled ones. Press down gently around the edges to start sealing.
  6. Seal with a fork: Dip a fork in flour or use it dry, and press the tines around the edges of each mini sandwich to create a crimped seal. Go around the entire edge twice.
  7. Toast the edges: Heat a non-stick skillet over medium heat. Spread a tiny amount of softened butter on both sides of each sealed bite. Cook for 1-2 minutes per side, until golden brown and slightly crispy.
  8. Cool and serve: Let the bites cool on a wire rack for at least 5 minutes before serving or packing.

Notes

Don’t skip the rolling step—it helps create a better seal. Use room temperature sunbutter for easier spreading. Watch the heat on the pan; medium heat is perfect to avoid burning. For a big batch, assemble without toasting, freeze on a baking sheet, then transfer to a freezer bag. Toast straight from frozen for 3-4 minutes per side. The sunbutter may turn green when cooked—this is normal and harmless.
