These Easy Sun Butter Banana Sushi Rolls are a quick, healthy snack that comes together in just 5 minutes. Creamy sun butter, sweet banana, and crunchy toppings make for a fun, nutritious treat that kids and adults love.

Ingredients

Scale
  • 1 ripe banana
  • 1 tablespoon sun butter (sunflower seed butter)
  • 1 tablespoon granola (optional)
  • 1 teaspoon chia seeds (optional)
  • 1 teaspoon hemp hearts (optional)
  • 1 tablespoon shredded coconut (optional)
  • 1 tablespoon mini chocolate chips (optional)
  • 1/4 teaspoon cinnamon (optional)
  • 1 teaspoon cocoa powder (optional)
  • 1 teaspoon honey or maple syrup (optional, for drizzling)

Instructions

  1. Prepare your toppings: Spread your chosen toppings (like granola, chia seeds, or shredded coconut) on a shallow dish or plate in an even layer.
  2. Peel the banana: Take one ripe banana and peel it carefully, keeping it in one piece if possible.
  3. Spread the sun butter: Using a butter knife or offset spatula, spread a generous, even layer of sun butter all over the banana, about 1/8 inch thick.
  4. Roll the banana: Gently roll the sun butter-covered banana in your prepared toppings, pressing lightly so they stick. Ensure the entire banana is coated.
  5. Slice into rounds: Place the rolled banana on a cutting board. Using a sharp knife (preferably serrated), slice the banana into rounds about 1/2 inch thick. You should get about 6-8 rounds per banana.
  6. Arrange and serve: Arrange the rounds on a serving platter. If desired, drizzle with honey, maple syrup, or melted chocolate. Serve immediately for best texture.

Notes

For easier slicing, chill the rolled banana in the fridge for 10-15 minutes before cutting. Use a serrated knife for clean cuts. If sun butter is too thick, warm it slightly in the microwave for 10-15 seconds. To prevent browning, brush banana with lemon juice before spreading sun butter. Best enjoyed fresh, but can be stored in an airtight container in the refrigerator for up to 4 hours.
