This fizzy, creamy Halloween punch with rainbow sherbet and ginger ale comes together in minutes and is a guaranteed crowd-pleaser. It’s the drink that proved me wrong about Halloween punch, and now I make it every year.

Ingredients

Scale
  • 1 liter ginger ale (chilled)
  • 1 pint rainbow sherbet (or orange or lime)
  • 1 cup frozen lychees (optional)
  • 1 cup pineapple juice (chilled)
  • 1/2 cup orange juice (chilled)
  • Ice cubes (optional)
  • For garnish: Gummy worms, plastic spider rings, or fresh mint leaves

Instructions

  1. Chill everything first. About an hour before serving, refrigerate ginger ale, pineapple juice, and orange juice. Keep sherbet in the freezer until the last minute.
  2. Set up your punch bowl or pitcher. Add a few ice cubes at the bottom if desired.
  3. Pour in the pineapple juice and orange juice. Stir briefly.
  4. Add the frozen lychees (if using) to the juice mixture.
  5. Slowly pour the chilled ginger ale down the side of the bowl. Do not stir too much to preserve carbonation.
  6. Using an ice cream scoop, add 6 to 8 large scoops of rainbow sherbet to the punch. Do not stir; let them float on top.
  7. Garnish with gummy worms, plastic spiders, or mint leaves right before serving. Ladle into cups, ensuring each serving gets some melting sherbet and a lychee eyeball.
  8. Keep the punch topped up with more ginger ale and sherbet as needed.

Notes

Don’t stir the sherbet in; let it melt on its own for a creamy layer. Chill all ingredients thoroughly. For a dairy-free version, use sorbet instead of sherbet. For an adult version, add 1 cup of vodka or white rum. Store leftovers in a sealed pitcher in the fridge for up to 24 hours; carbonation will fade.
