This easy slow cooker Buffalo chicken dip is the creamiest, most crowd-pleasing appetizer for game day, potlucks, or any gathering. Made with simple ingredients and minimal prep, it delivers bold, tangy, spicy flavor that disappears in minutes.

Ingredients

Scale
  • 2 (10-ounce) cans chunk chicken breast, drained
  • 16 ounces cream cheese, softened and cut into cubes
  • 1 cup ranch dressing
  • 1/2 cup Buffalo wing sauce
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons unsalted butter (optional)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder (optional)
  • Salt and black pepper to taste

Instructions

  1. Prep your ingredients (5 minutes): Take the cream cheese out of the fridge about 30 minutes before you start so it softens. While you wait, drain the canned chicken and flake it with a fork in a small bowl. Shred the cheddar and Monterey Jack cheese if you are using blocks. Measure out the ranch dressing and Buffalo wing sauce.
  2. Blend the creamy base (3 minutes): In a medium mixing bowl, add the softened cream cheese, ranch dressing, Buffalo wing sauce, garlic powder, and onion powder. Use a hand mixer on low speed to blend until smooth and completely combined. No lumps allowed hereโ€”this is the foundation of the dip. If you do not have a hand mixer, let the cream cheese soften even longer (an hour) and whisk vigorously.
  3. Layer in the slow cooker (2 minutes): Spray the inside of your slow cooker with nonstick cooking spray or rub it with a little butter. Spread the flaked chicken evenly across the bottom. Pour the cream cheese mixture over the top and spread it gently. Do not stir yetโ€”layering helps everything melt evenly.
  4. Add the cheese and butter (1 minute): Sprinkle the shredded cheddar and Monterey Jack cheese evenly over the cream cheese mixture. Dot the top with small pieces of the unsalted butter if you are using it. The butter adds a silky finish, but you can skip it and still get great results.
  5. Cook on low (2 hours): Cover the slow cooker with the lid and cook on LOW for 2 hours. Do not be tempted to cook on highโ€”low and slow gives you the creamiest texture without the dip separating or burning around the edges. After about 1 hour and 45 minutes, give it a quick stir to check the consistency. It should be smooth, hot, and bubbly around the edges.
  6. Stir and adjust (2 minutes): Once the dip is fully melted and hot, give it a good stir until everything is evenly combined. Taste it and adjust the seasoning. Need more heat? Add another tablespoon of Buffalo sauce. Want it creamier? Stir in an extra splash of ranch dressing. This is your dipโ€”make it yours.
  7. Keep warm and serve: Switch the slow cooker to the WARM setting. This keeps the dip at the perfect serving temperature for hours without overcooking it. If you are serving immediately, transfer the dip to a serving bowl or serve it straight from the slow cooker. Garnish with chopped green onions, crumbled blue cheese, or a drizzle of extra hot sauce if you want to get fancy.

Notes

Do not overcook; 2 hours on low is ideal. Shred your own cheese for best melt. Let cream cheese soften naturally. Layer ingredients in slow cooker for even melting. For a lighter version, use reduced-fat cream cheese and ranch dressing. For dairy-free, use vegan alternatives. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
