  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ยฝ teaspoon garlic powder
  • ยฝ teaspoon salt
  • ยผ teaspoon black pepper
  • ยฝ cup beef broth or water
  • 1 (13-ounce) bag restaurant-style tortilla chips
  • 1 (16-ounce) can refried beans
  • 2 cups shredded Mexican blend cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 cup diced tomatoes
  • ยฝ cup sliced black olives
  • ยฝ cup sliced jalapeรฑos
  • ยฝ cup sour cream
  • ยผ cup chopped fresh cilantro
  • 1 avocado, diced
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Line a large sheet pan with aluminum foil or parchment paper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 2-3 minutes until softened.
  3. Add the ground beef, breaking it up with a wooden spoon. Cook for 5-6 minutes until browned. Drain excess fat if needed.
  4. Add minced garlic, chili powder, smoked paprika, cumin, garlic powder, salt, and pepper. Stir and cook for 1 minute until fragrant.
  5. Pour in beef broth (or water) and let simmer for 2-3 minutes until liquid mostly evaporates. Set aside.
  6. Spread tortilla chips in a single even layer on the prepared sheet pan.
  7. Dollop small amounts of refried beans over the chips.
  8. Spoon the cooked ground beef evenly over the chips and beans.
  9. Sprinkle Mexican blend cheese and sharp cheddar evenly over the entire pan.
  10. Bake for 8-10 minutes until cheese is melted and bubbly, and chip edges are golden.
  11. Remove from oven and let cool for 2-3 minutes.
  12. Top with diced tomatoes, black olives, jalapeรฑos, diced avocado, and fresh cilantro. Drizzle with sour cream and serve with lime wedges.

Notes

Layer strategically: chips, then refried beans (moisture barrier), then beef, then cheese. Shred your own cheese for best melt. Don’t overcrowd the pan. Let nachos rest 2-3 minutes before adding cold toppings to prevent sogginess.
