A simple, flavorful slow cooker recipe for tender pulled chicken infused with salsa verde, perfect for quick and delicious weeknight tacos.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 to 2 lbs / 680 to 900 g)
  • 1 ½ cups (360 ml) jarred salsa verde
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 lime (about 2 tablespoons / 30 ml)
  • ¼ cup chopped fresh cilantro (optional)
  • 810 small corn or flour tortillas
  • Optional toppings: diced avocado, shredded cheese, sour cream, sliced radishes, pickled jalapeños, chopped onions

Instructions

  1. Prepare the Ingredients (10 minutes): Peel and thinly slice the onion. Mince the garlic cloves. Rinse the chicken breasts and pat dry with paper towels.
  2. Layer in the Crockpot: Place chicken breasts in a single layer at the bottom of the crockpot. Scatter sliced onions and minced garlic evenly over the chicken.
  3. Add the Salsa Verde and Spices: Pour 1 ½ cups salsa verde over the chicken and onions. Sprinkle cumin, chili powder, salt, and pepper over everything. Stir gently to combine without breaking up the chicken.
  4. Cook Low and Slow: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until chicken is tender and shreds easily.
  5. Shred the Chicken: Use two forks or tongs to shred the chicken directly in the crockpot. Mix shredded chicken with the juices and onions.
  6. Add Lime Juice and Cilantro: Squeeze fresh lime juice over the chicken and sprinkle chopped cilantro. Mix well to brighten flavors.
  7. Warm the Tortillas: Heat corn or flour tortillas in a dry skillet or microwave until soft and pliable.
  8. Assemble the Tacos: Spoon pulled chicken onto each tortilla and add desired toppings such as avocado, cheese, sour cream, or pickled jalapeños.
  9. Serve Immediately: Enjoy the tacos warm, paired with your favorite sides or drinks.

Notes

If using chicken thighs, cooking time remains similar but yields juicier meat. Avoid overcooking on high to prevent dryness. Add chicken broth or water if liquid level gets low during cooking. Shred chicken gently to maintain texture. Warm tortillas just before serving to avoid sogginess.
