  • 1 cup (240ml) milk of choice (dairy, almond, oat, or soy)
  • 1 tablespoon chia seeds (optional but recommended)
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash 1 large ripe banana with a fork until mostly smooth but with a few small chunks left for texture (about 1-2 minutes).
  2. Stir in 2 tablespoons of peanut butter. If thick, warm slightly in the microwave for 10 seconds to soften, then mix well.
  3. Add 1 cup (90g) rolled oats, 1 tablespoon chia seeds, and a pinch of salt. Stir to combine evenly.
  4. Pour in 1 cup (240ml) milk of choice, 1 tablespoon honey or maple syrup, and ½ teaspoon vanilla extract. Stir until mixture is creamy and oats are fully coated (1-2 minutes).
  5. Transfer mixture to a jar or bowl with a lid. Seal tightly and refrigerate for at least 6 hours, ideally 8-10 hours.
  6. In the morning, stir the oats well. If too thick, add a splash of milk to loosen. Top with fresh banana slices or crushed peanuts if desired.

Notes

Do not over-mash the banana to keep some texture. Use rolled oats for best creaminess; avoid instant or steel-cut oats. Chia seeds help thicken the mixture and add nutrition but are optional. Use natural peanut butter without added sugar or oils for best flavor. Refrigerate overnight for at least 6 hours for optimal texture. Add milk in the morning if oats are too thick. Can be stored up to 3 days in the fridge. For vegan version, use plant milk and maple syrup instead of honey. Nut-free alternatives include sunflower seed butter or tahini.
