  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter

Instructions

  1. Prep the pork chops: Pat them completely dry with paper towels. Season both sides lightly with salt and pepper. If thicker than 1 inch, pound to even thickness.
  2. Set up breading station: In first bowl, add flour. In second bowl, beat eggs with water. In third bowl, mix Parmesan, breadcrumbs, garlic powder, paprika, oregano (if using), salt, and pepper.
  3. Coat the pork chops: Dredge each chop in flour, shaking off excess. Dip in egg wash, letting excess drip off. Press firmly into Parmesan mixture, coating both sides. Press extra mixture onto each side for a thicker crust.
  4. Heat skillet: Place large skillet over medium-high heat. Add olive oil and butter, swirling to combine. Heat until shimmering but not smoking.
  5. Cook pork chops: Place coated chops in hot skillet without crowding. Cook undisturbed for 4-5 minutes until golden. Flip with tongs and cook another 3-4 minutes until internal temperature reaches 145°F.
  6. Rest the chops: Transfer to a wire rack over a baking sheet. Let rest for at least 5 minutes before serving.
