Easy Overnight Pumpkin Spice Oats (Best Fall Breakfast!)

These creamy, perfectly spiced overnight oats taste like pumpkin pie for breakfast but are packed with fiber and protein. With just 5 minutes of prep, you’ll have a delicious fall breakfast ready when you wake up.

Ingredients

  • 1 cup rolled oats (old-fashioned)
  • ½ cup pumpkin puree (100% pure, not pumpkin pie filling)
  • 1 cup milk (dairy, almond, oat, or coconut)
  • ½ cup plain Greek yogurt
  • 2 tablespoons maple syrup (pure maple syrup preferred)
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • Pinch of salt
  • Optional toppings: chopped pecans or walnuts, pumpkin seeds (pepitas), extra maple syrup or honey, dollop of Greek yogurt, fresh fruit (sliced banana or apple)

Instructions

  1. In a mixing bowl or directly in a jar, combine the rolled oats, chia seeds, cinnamon, nutmeg, ginger, cloves, and salt. Stir to evenly distribute the spices.
  2. Add the pumpkin puree, milk, Greek yogurt, maple syrup, and vanilla extract. If using a bowl, whisk until smooth and well combined. If using a jar, seal the lid and shake vigorously for about 30 seconds.
  3. Check the consistency—the mixture should be slightly thin; it will thicken overnight. If too thick, add a splash of milk; if too thin, it will be fine by morning.
  4. Divide the mixture evenly into jars or airtight containers, leaving about an inch of space at the top for toppings and expansion.
  5. Refrigerate overnight (or at least 4 hours) to allow the oats to soften and absorb the liquid.
  6. In the morning, stir the oats well (chia seeds may settle). Add desired toppings such as chopped pecans, a drizzle of maple syrup, or a dollop of Greek yogurt.
  7. Enjoy cold straight from the fridge, or microwave for 45–60 seconds for a warm breakfast. Stir well after heating.

Notes

For best texture, use old-fashioned rolled oats, not quick-cooking or steel-cut. Chia seeds are key for creaminess—don’t skip them. If using pumpkin puree from a can, freeze leftovers in an airtight container or ice cube tray for future use. The oats keep in the fridge for up to 5 days; flavors improve after a day or two. To reheat, microwave for 45–60 seconds or warm on the stovetop. If oats become too thick, stir in a splash of milk.
