  • 1 medium onion, finely diced
  • 1 packet (1 oz) taco seasoning
  • 2 cups beef broth (low-sodium recommended)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • 1 cup salsa (medium or hot)
  • 1 packet (1 oz) dry ranch dressing mix
  • 1 cup shredded cheddar cheese (for topping)
  • Sour cream (optional, for serving)

Instructions

  1. Heat a large pot over medium-high heat. Add ground beef and diced onion. Cook for 5-7 minutes, breaking up the meat, until beef is no longer pink and onions are soft. Drain excess fat if necessary.
  2. Sprinkle taco seasoning and dry ranch dressing mix over the beef and onions. Stir well to coat and cook for 1 minute to bloom the spices.
  3. Pour in beef broth, rinsed black beans, corn, and salsa. Stir until seasonings are dissolved. Bring mixture to a gentle boil.
  4. Reduce heat to low, cover with a lid, and simmer for 15-20 minutes to allow flavors to meld and vegetables to soften.
  5. Taste and adjust seasoning with salt and pepper if needed. If too thick, add more broth; if too thin, simmer uncovered briefly.
  6. Ladle into bowls and top with shredded cheddar cheese and sour cream. Garnish with fresh cilantro or green onions if desired.

Notes

Rinsing canned beans and corn is essential to remove starchy liquid. For a thicker soup, mash a few beans against the side of the pot. The soup freezes well for up to 3 months, but omit sour cream and cheese before freezing. Vegetarian version: swap beef for plant-based substitute and use vegetable broth.
