A rich, hearty lasagna soup made entirely in one pot, featuring tender pasta in a tomato-basil broth with creamy ricotta. This shortcut delivers all the flavor of traditional lasagna without the fuss or multiple dishes.

  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 28 oz (800g) can crushed tomatoes (preferably San Marzano)
  • 4 cups (960 ml) low-sodium chicken broth
  • 8 oz (225g) dried lasagna noodles, broken into 1-2 inch pieces
  • 1 cup (240g) full-fat ricotta cheese
  • 1/4 cup chopped fresh basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Freshly grated Parmesan cheese for serving

Instructions

  1. Brown the beef: Heat a large Dutch oven over medium-high heat. Add ground beef and cook, breaking it up, until browned. Leave about 1 tablespoon of fat in the pot.
  2. Sauté aromatics: Add diced onion and cook for 2 minutes until softened. Add minced garlic and stir for 30 seconds until fragrant.
  3. Add tomatoes and broth: Pour in crushed tomatoes and chicken broth. Stir well, scraping up any browned bits from the bottom.
  4. Season the broth: Add dried oregano, red pepper flakes (if using), 1 teaspoon salt, and 1/2 teaspoon black pepper. Stir to combine. Taste and adjust salt if needed.
  5. Cook the pasta: Bring soup to a boil, then add broken lasagna noodles. Reduce heat to a gentle simmer. Cook for 10-12 minutes until pasta is tender but still al dente, stirring every few minutes to prevent sticking.
  6. Finish with ricotta: Remove pot from heat. Drop spoonfuls of ricotta into the soup and gently stir to create creamy ribbons. Do not fully incorporate.
  7. Add basil and serve: Stir in chopped basil. Ladle soup into bowls and top with grated Parmesan. Serve immediately.

Notes

For make-ahead, cook pasta separately and add to individual bowls before pouring hot broth over it to prevent noodles from absorbing all liquid. If soup is too thick after cooking, add a splash of hot broth or water. If too thin, simmer uncovered for a few minutes. Let ricotta come to room temperature before adding for best texture. Season in layers for best flavor.
