Easy One-Bowl Apple Crisp: Best Homemade Oat Crumble

This easy one-bowl apple crisp is the perfect last-minute dessert for potlucks or dinner parties. With tender, spiced apples and a crunchy oat crumble topping, it comes together in under 15 minutes using simple pantry ingredients.

  • 6 medium-sized apples (about 2 pounds or 900g), a mix of Granny Smith and Honeycrisp recommended
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon (15ml) lemon juice
  • 1 tablespoon (8g) all-purpose flour
  • 1 teaspoon ground cinnamon (Saigon cinnamon preferred)
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 teaspoon vanilla extract
  • 1 cup (90g) rolled oats (old-fashioned, not quick oats)
  • 1/2 cup (60g) all-purpose flour
  • 1/2 cup (100g) packed brown sugar (light or dark)
  • 1/2 cup (113g) unsalted butter, cold and cubed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 1/4 cup (30g) chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Wash the apples. If leaving the skin on, core and slice them into 1/4-inch thick slices. Place the sliced apples directly into a large mixing bowl.
  3. To the apples in the bowl, add the granulated sugar, lemon juice, flour, cinnamon, nutmeg, and vanilla extract. Toss everything together with a wooden spoon until the apples are evenly coated. Spread the apple mixture evenly into an ungreased 9×13-inch baking dish.
  4. In the same bowl (no need to wash it), add the rolled oats, flour, brown sugar, cinnamon, and salt. Stir together. Add the cold, cubed butter on top. Use a pastry cutter or your fingertips to work the butter into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized butter pieces remaining. If using nuts, stir them in now. Do not overwork.
  5. Sprinkle the oat crumble topping evenly over the apples in the baking dish. Do not press it down.
  6. Bake for 40-45 minutes, until the topping is golden brown and the apple filling is bubbling around the edges. If the topping browns too quickly, loosely tent with aluminum foil for the last 10 minutes.
  7. Let the crisp rest on a wire rack for at least 10-15 minutes before serving.

Notes

Use cold butter for the topping and do not overmix. Let the crisp rest before serving to allow the juices to thicken. For a nuttier flavor, toast the oats beforehand. The crisp can be assembled a day in advance (without the topping) and stored in the fridge.
