A quick and easy no-bake pumpkin pie parfait made with simple pantry ingredients, ready in just 5 minutes. Perfect for fall gatherings, this creamy, spiced dessert features a crunchy topping and is a crowd-pleaser for all ages.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1 cup pumpkin puree
  • 1/2 cup powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup crushed graham crackers or gingersnaps
  • 2 tablespoons melted butter
  • 1 tablespoon brown sugar
  • Whipped cream for topping
  • Optional garnish: candied pecans, caramel sauce, or cinnamon

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 30 minutes or microwaving in 10-second bursts until soft.
  2. Whip the heavy cream in a chilled bowl with a hand mixer on medium speed until soft peaks form, about 2-3 minutes. Set aside in the fridge.
  3. In a large bowl, beat the softened cream cheese with powdered sugar until smooth and creamy, about 2 minutes.
  4. Add pumpkin puree, pumpkin pie spice, and vanilla extract to the cream cheese mixture. Beat on medium speed until fully combined and smooth.
  5. Fold in the whipped cream gently using a spatula, adding one-third first to lighten the mixture, then the rest. Fold until no white streaks remain.
  6. In a small bowl, combine crushed graham crackers (or gingersnaps), melted butter, and brown sugar. Stir until the mixture resembles wet sand.
  7. Assemble the parfaits: layer about 1-2 tablespoons of crunchy topping at the bottom of each serving glass, then add a generous layer of pumpkin cream (about halfway). Repeat with another layer of topping and pumpkin cream, leaving room at the top for whipped cream.
  8. Chill the assembled parfaits in the fridge for at least 30 minutes before serving. Top with whipped cream and a sprinkle of pumpkin pie spice before serving.

Notes

For best results, use room temperature cream cheese and pumpkin puree. Do not over-whip the cream; soft peaks are ideal. Chilling for at least 30 minutes is essential for texture. The topping is best made fresh. For neat layers, use a piping bag. The parfaits taste even better the next day.
