Instructions

  1. In a large mixing bowl, combine 1 cup rolled oats and any optional dry add-ins (flaxseed, chia seeds, protein powder). Stir to distribute evenly.
  2. Add ½ cup creamy peanut butter, ⅓ cup honey, and 1 teaspoon vanilla extract. If peanut butter is cold, let it come to room temperature first.
  3. Stir with a wooden spoon or sturdy spatula for about 2 minutes until the mixture forms a cohesive dough. It will look messy at first but will come together.
  4. Check the texture: it should hold together when pressed between fingers. If too dry, add a teaspoon of honey or peanut butter. If too wet, add a tablespoon of oats.
  5. Fold in any optional extras like mini chocolate chips or shredded coconut, stirring gently until evenly distributed.
  6. Scoop about 1 tablespoon of mixture and roll between palms to form smooth balls. If sticky, lightly wet hands with water. Place on a parchment-lined baking sheet or plate.
