Quick and easy no-bake energy balls made with peanut butter, oats, and chocolate chips, perfect for a healthy snack on the go.

  • 1 ½ cups rolled oats (135 g)
  • ½ cup peanut butter (125 g), creamy or crunchy
  • ⅓ cup honey (113 g), or maple syrup as vegan alternative
  • ½ cup mini chocolate chips (90 g)
  • 2 tablespoons ground flaxseed (14 g), optional but recommended
  • 1 teaspoon vanilla extract (5 ml)
  • Pinch of sea salt

Instructions

  1. Measure 1 ½ cups rolled oats, ½ cup peanut butter, ⅓ cup honey, ½ cup mini chocolate chips, 2 tablespoons ground flaxseed, 1 teaspoon vanilla extract, and a pinch of sea salt. Line a baking sheet or plate with parchment paper.
  2. In a mixing bowl, combine the rolled oats and ground flaxseed. Stir briefly to blend.
  3. Add peanut butter, honey, and vanilla extract. Mix thoroughly until all ingredients are incorporated and the mixture is sticky and dense.
  4. Fold in the mini chocolate chips and a pinch of sea salt gently to avoid breaking the chips or over-mixing.
  5. Scoop about 1 ½ tablespoons (approximately 20 g) of mixture and roll into tight balls between your palms. You should get around 15-18 balls.
  6. Place the rolled balls on the parchment-lined baking sheet or plate and chill in the fridge for at least 30 minutes to firm up.
  7. Once firm, the energy balls are ready to eat. Store any extras in an airtight container in the fridge.

Notes

If the mixture is too dry to roll, add a teaspoon of water or more honey until it sticks together. If too sticky, add more oats. Chilling is crucial to firm the balls and prevent them from falling apart. Natural peanut butter is recommended for best flavor and texture.
