These cozy, no-bake cookies feature a chewy oat base infused with concentrated apple cider and warm spices, finished with a thin, glossy maple icing. They are quick to make, require no oven, and stay soft for days.

  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) packed brown sugar
  • 2 tablespoons pure maple syrup
  • 2 cups (160g) old-fashioned rolled oats
  • 1 cup (125g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • 1 cup (120g) confectioners’ sugar, sifted
  • 1 tablespoon pure maple syrup
  • 12 teaspoons milk (dairy or non-dairy)

Instructions

  1. Pour 2 cups of apple cider into a medium saucepan. Bring to a boil over medium-high heat, then reduce to medium-low to simmer.
  2. Simmer the cider for 15-20 minutes, stirring occasionally, until reduced by half to approximately 1 cup of thick, syrupy concentrate.
  3. Add the butter, brown sugar, and 2 tablespoons of maple syrup to the reduced cider. Increase heat to medium and stir constantly until butter melts and sugar dissolves (2-3 minutes).
  4. Remove the saucepan from the heat.
  5. In a large mixing bowl, whisk together the flour, cinnamon, nutmeg, and salt.
  6. Pour the hot cider mixture over the dry ingredients and stir immediately to pasteurize the flour and combine.
  7. Stir in the rolled oats until every oat is coated and the mixture holds together.
  8. Line a baking sheet with parchment paper. Scoop about 2 tablespoons of mixture per cookie, roll into balls, and gently flatten.
  9. Place cookies on the baking sheet, spacing them 2 inches apart.
  10. Refrigerate the cookies for at least 30 minutes to firm up.
  11. While cookies chill, whisk confectioners’ sugar, 1 tablespoon maple syrup, and 1-2 teaspoons milk in a small bowl until a drizzlable consistency is reached.
  12. Remove cookies from the fridge and drizzle the icing over the top.
  13. Let the cookies sit for another 10 minutes to allow the icing to set.

Notes

Use fresh, unpasteurized apple cider for the best flavor. Do not use instant oats as they will make the cookies mushy. Ensure the cider is reduced by half to concentrate the flavor and prevent soggy cookies. The flour is safe to eat because it is cooked in the hot mixture, but you can toast it in the oven for 5 minutes for extra safety if desired. For a gluten-free version, use certified gluten-free oats and flour. For a vegan version, use plant-based butter and milk.
