Fudgy brownie bites topped with melted chocolate, toasted marshmallows, and crunchy graham cracker crumbs. Perfect portable treat for tailgates and game day gatherings.

  • 1 box (18 oz) brownie mix (preferably fudge or chewy variety)
  • 2 large eggs, room temperature
  • ⅓ cup vegetable oil (or melted coconut oil)
  • ¼ cup water (or strong brewed coffee)
  • 1 cup semi-sweet chocolate chips
  • 2 cups mini marshmallows
  • ½ cup crushed graham crackers (about 4 full sheets)
  • ¼ cup chopped pecans or walnuts (optional)
  • Sea salt flakes (optional, for garnish)
  • Peanut butter chips (optional, substitute for half the chocolate chips)

Instructions

  1. Preheat oven to 350°F (175°C). Generously spray a 24-cup mini muffin tin with non-stick cooking spray.
  2. In a medium mixing bowl, combine brownie mix, eggs, vegetable oil, and water. Stir until just combined (about 30 strokes); do not overmix. Batter should be thick and glossy.
  3. Fill each mini muffin cup about ¾ full with brownie batter (about 1 heaping tablespoon per cup).
  4. Bake on middle rack for 10-12 minutes, until edges are set and a toothpick inserted in center comes out with a few moist crumbs. Centers should look slightly underdone.
  5. Remove from oven and immediately press 4-5 chocolate chips into the center of each warm brownie bite. Let sit for 2 minutes.
  6. Place 3-4 mini marshmallows on top of each brownie bite, pressing gently to adhere to melted chocolate.
  7. Switch oven to broil (high setting). Return muffin tin to oven and broil for 30-60 seconds, watching constantly, until marshmallows are golden brown with some charred spots.
  8. While marshmallows are hot and sticky, sprinkle a generous pinch of crushed graham crackers over each brownie bite.
  9. Cool in pan for 10 minutes, then transfer to a cooling rack. Cool completely for at least 20 minutes before serving.

Notes

Do not overbake the brownie base; they continue cooking from residual heat. Watch marshmallows constantly under broiler to prevent burning. Let cool completely before serving to set structure. For best results, use mini marshmallows, not jumbo. Store in airtight container at room temperature for up to 3 days. Can be frozen for up to 2 months.
