This maple glazed delicata squash is a quick and easy side dish that converts even the biggest squash skeptics. With tender, caramelized edges and a sweet-savory glaze, it’s the perfect crowd-pleaser for any gathering.

  • 2 medium delicata squash (about 2–2.5 lbs total)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons avocado oil or olive oil
  • 1 tablespoon unsalted butter, melted
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne pepper (or a pinch)
  • 1/2 teaspoon kosher salt (plus more to taste)
  • 4–5 sprigs fresh thyme (optional but recommended)
  • Flaky sea salt (for finishing, like Maldon)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large, rimmed baking sheet with parchment paper.
  2. Wash the delicata squash thoroughly and pat dry. Trim off the ends, slice each squash in half lengthwise, and scoop out the seeds and stringy pulp. Place the halves cut-side down and slice crosswise into 1/2-inch thick half-moons.
  3. In a large mixing bowl, whisk together the maple syrup, avocado oil, melted butter, cinnamon, cayenne pepper, and 1/2 teaspoon kosher salt until well combined.
  4. Add the sliced squash to the bowl and toss gently until every piece is evenly coated in the glaze.
  5. Spread the glazed squash slices in a single, even layer on the prepared baking sheet. Tuck the fresh thyme sprigs in between the slices.
  6. Roast for 20-25 minutes, flipping the squash halfway through (after about 12 minutes), until tender and edges are caramelized and golden-brown.
  7. Remove from the oven, discard the thyme sprigs, and immediately sprinkle with flaky sea salt. Serve warm.

Notes

For extra-caramelized edges, broil the squash for the last 1-2 minutes of cooking, watching closely to prevent burning. You can wash and slice the squash up to a day in advance and store in a sealed bag in the fridge. The glaze can also be mixed ahead of time.
