Easy Make-Ahead Breakfast Sliders (15 Min Prep!)

These easy tailgate breakfast sliders are the make-ahead miracle you didn’t know you needed. With fluffy eggs, savory sausage, and melted cheese on soft Hawaiian rolls, they’re perfect for game day, brunch, or holiday mornings.

  • 12-count package Hawaiian Sweet Rolls (like King’s Hawaiian)
  • 1 lb breakfast sausage (mild or spicy)
  • 8 large eggs (room temperature if possible)
  • 1/4 cup milk or half-and-half
  • 1 1/2 cups shredded cheddar cheese (sharp or mild)
  • 1/2 cup shredded mozzarella cheese
  • 3 tablespoons salted butter, melted
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Optional: 1 tablespoon poppy seeds or everything bagel seasoning

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 baking dish with non-stick spray or butter.
  2. In a large skillet over medium heat, crumble and cook the breakfast sausage until browned and cooked through, about 6-8 minutes. Transfer to a paper towel-lined plate to drain excess grease. Set aside.
  3. In a medium bowl, whisk together the eggs, milk, garlic powder, onion powder, and a pinch of salt and pepper until fully combined and slightly frothy, about 30 seconds.
  4. In the same skillet (drain most of the grease but leave a tiny bit), reduce heat to medium-low and pour in the egg mixture. Let sit for 30 seconds, then gently push cooked eggs from edges toward center with a spatula. Continue until eggs are just set but still soft and fluffy, about 3-4 minutes. Remove from heat while still slightly undercooked.
  5. Without separating the individual rolls, carefully slice the entire slab of Hawaiian rolls in half horizontally. Place the bottom half in the greased baking dish.
  6. Toast the bottom half in the oven for 3-4 minutes to prevent sogginess.
  7. Remove the dish from the oven. Spread the cooked sausage evenly over the toasted bottom rolls. Spoon the scrambled eggs over the sausage. Sprinkle both cheeses evenly over the eggs.
  8. Place the top half of the rolls over the cheese layer, pressing down gently.
  9. In a small bowl, whisk together the melted butter and maple syrup (if using). Brush this mixture generously over the tops of the rolls. Sprinkle with poppy seeds or everything bagel seasoning if desired.
  10. Bake for 15-18 minutes, or until the cheese is melted and bubbly and the tops are golden brown. For extra color, broil for the last 1-2 minutes, watching closely.
  11. Let the sliders rest in the pan for 5 minutes before slicing along the individual roll lines. Serve warm.

Notes

To prevent sogginess, toast the bottom half of the rolls before adding filling. For make-ahead, assemble without the butter glaze, cover, and refrigerate overnight. Brush with glaze just before baking and add 5-7 minutes to baking time. For freezing, assemble completely (including glaze), wrap tightly, and freeze for up to 3 months. Thaw overnight in the refrigerator before baking, or bake from frozen adding 15-20 minutes.
