Instructions

  1. Prep the berries (10 minutes): Rinse the strawberries, blueberries, and raspberries gently under cold water. Pat dry with paper towels. Hull and slice the strawberries into thin pieces. Place all berries in a bowl, add lemon juice and powdered sugar, and toss lightly to coat. Set aside to macerate while you prepare the base.
  2. Make the creamy base (15 minutes): In a large mixing bowl, beat the softened cream cheese with the granulated sugar and vanilla extract until smooth and creamy. In a separate chilled bowl, whip the heavy cream to soft peaks using an electric mixer. Gently fold the whipped cream into the cream cheese mixture using a spatula.
  3. Prepare the crunchy topping (5 minutes): Combine the crushed graham crackers with melted butter in a small bowl. Mix until the crumbs are evenly coated.
  4. Assemble the dessert (10 minutes): In serving glasses or bowls, start with a layer of the creamy base, then add a generous spoonful of the macerated berries. Sprinkle some of the buttery crumb mixture on top. Repeat layers if desired. Finish with a few fresh berries on top for garnish.
