These homemade pizza bites come together in under 20 minutes, using simple ingredients for a crispy, cheesy snack that’s perfect for lunchboxes or busy weeknights. A nostalgic twist on the classic store-bought version, but better.

Ingredients

Scale
  • 1 can (16.3 oz) refrigerated biscuit dough (e.g., Pillsbury Grands! homestyle)
  • ½ cup pizza sauce
  • 1 cup shredded low-moisture part-skim mozzarella cheese
  • ½ cup mini pepperoni (or regular pepperoni, quartered)
  • 2 tablespoons melted butter
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Open the can of biscuit dough and separate into 8 biscuits. On a lightly floured surface, roll each biscuit into a 3-inch round, about ¼ inch thick.
  3. Place the dough rounds on the prepared baking sheet about 1 inch apart. Use your fingers to create a slight rim on each round.
  4. Spoon about 1 tablespoon of pizza sauce onto each round and spread evenly, leaving a small border.
  5. Sprinkle a generous pinch of mozzarella (about 1½ tablespoons) over the sauce on each bite. Arrange 4-5 mini pepperoni slices on top.
  6. In a small bowl, mix melted butter with garlic powder. Brush the exposed edges of the dough with the butter mixture. Sprinkle a tiny pinch of dried oregano over each pizza bite.
  7. Bake on the middle rack for 10-12 minutes, until edges are golden brown and cheese is bubbly and starting to brown.
  8. Let cool on the baking sheet for 2-3 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

For best results, use room temperature dough and low-moisture mozzarella. Avoid over-saucing to prevent sogginess. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F oven for 5-7 minutes to restore crispiness. Freeze baked bites for up to 3 months.
