  • 2 medium ripe bananas, mashed
  • 1 cup grated zucchini (about 1 medium zucchini, squeezed to remove excess moisture)
  • 1 ¾ cups (220g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 large egg, room temperature
  • ½ cup (120ml) unsweetened applesauce
  • 3 tablespoons honey or maple syrup (optional)
  • 1 teaspoon vanilla extract
  • ¼ cup (60ml) olive oil or melted coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease lightly with oil.
  2. Grate the zucchini finely, then place it in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. Set aside.
  3. In a large bowl, whisk together the dry ingredients: all-purpose flour, baking powder, baking soda, cinnamon, and salt.
  4. In a separate bowl, combine the wet ingredients: mashed bananas, grated zucchini, egg, applesauce, honey or maple syrup, vanilla extract, and oil. Whisk until smooth and well blended.
  5. Pour the wet ingredients into the dry ingredients and gently fold together using a spatula. Stop mixing when a few streaks of flour remain to avoid overmixing.
  6. Spoon the batter evenly into the muffin cups, filling each about 3/4 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Start checking around 18 minutes to avoid overbaking.
  8. Remove muffins from oven and let cool in the pan for 5 minutes, then transfer to a cooling rack to finish cooling.

Notes

Squeeze out excess moisture from zucchini to avoid soggy muffins. Do not overmix batter to keep muffins tender. Use room temperature eggs for better batter consistency. For gluten-free, substitute flour with a 1:1 gluten-free blend. For vegan, replace egg with flax egg and honey with maple syrup.
