Easy Grilled Chicken Lettuce Wraps

Smoky grilled chicken thighs in crisp butter lettuce cups with fresh veggies and a tangy dipping sauce. A quick, crowd-pleasing game day recipe that comes together in just 25 minutes.

Ingredients

  • 1/3 cup low-sodium soy sauce (or tamari for gluten-free)
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon red pepper flakes (optional)
  • 1.5 pounds boneless, skinless chicken thighs
  • Salt and black pepper, to taste
  • 1 large head butter lettuce or bibb lettuce
  • 1 cup shredded carrots
  • 1/2 cup thinly sliced cucumber
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup chopped roasted peanuts
  • 3 tablespoons hoisin sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sriracha
  • 1 teaspoon lime juice

Instructions

  1. Make the marinade: In a medium bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes. Set aside 1/4 cup of this mixture in a small bowl for finishing sauce.
  2. Marinate the chicken: Place chicken thighs in a large zip-top bag or shallow dish. Pour remaining marinade over chicken, seal, and massage to coat. Let sit at room temperature for 15 minutes (or refrigerate up to 2 hours).
  3. Preheat grill to medium-high heat (about 400°F). Clean and oil the grates.
  4. Remove chicken from marinade, letting excess drip off. Season both sides with salt and pepper. Grill for 5-6 minutes per side, until internal temperature reaches 165°F.
  5. Transfer chicken to a cutting board and let rest for 5 minutes. Slice against the grain into thin strips.
  6. While chicken rests, wash and dry butter lettuce leaves. Separate large outer leaves and pat dry.
  7. Assemble wraps: Lay lettuce cups on a platter. Divide sliced chicken among cups. Top with shredded carrots, cucumber slices, cilantro, reserved finishing sauce, and chopped peanuts.
  8. Make dipping sauce: In a small bowl, whisk together hoisin sauce, soy sauce, sriracha, and lime juice. Serve on the side.

Notes

For best results, use chicken thighs for juiciness. Reserve 1/4 cup of marinade before adding raw chicken to use as a finishing sauce. Pat lettuce leaves dry to prevent sogginess. Leftover chicken keeps in the fridge for up to 3 days; store lettuce separately.
