  • 3 cups cooked, shredded chicken (rotisserie chicken recommended)
  • 2 cans (15 oz each) great northern beans or cannellini beans, drained and rinsed
  • 1 can (4 oz) diced green chilies (mild or hot)
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp dried oregano
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1/2 cup sour cream or plain Greek yogurt (added at the end)
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add finely chopped onion and sauté until translucent, about 5-7 minutes. Add minced garlic and cook for another 1-2 minutes until fragrant.
  2. In a large mixing bowl, combine sautéed onion and garlic, shredded chicken, drained white beans, diced green chilies, chicken broth, cumin, chili powder, oregano, smoked paprika, salt, and pepper. Stir gently to mix evenly.
  3. Spoon the mixture into quart-sized freezer bags, pressing out excess air before sealing. Label each bag with date and cooking instructions.
  4. Freeze bags flat for at least 4 hours or up to 3 months.
  5. When ready to cook, thaw overnight in the fridge or add directly to slow cooker from frozen (add extra hour if frozen).
  6. Cook on low for 6-8 hours or high for 3-4 hours until heated through and flavors meld.
  7. Just before serving, stir in sour cream or Greek yogurt. Adjust seasoning if needed.

Notes

Sautéing onion and garlic adds depth but can be skipped for time. Stir in sour cream at the end to avoid curdling. Thaw overnight for best results or cook from frozen with extra time. Avoid over-stirring during cooking to keep beans intact. Add fresh lime juice before serving for brightness. Use rotisserie chicken for convenience. Adjust spice level with jalapeños or cayenne. For dairy-free, substitute sour cream with coconut yogurt or cashew cream.
