  • 1 packet (1 oz or 28g) ranch dressing mix
  • 2 tablespoons (30ml) fresh lemon juice

  • 1 large orange bell pepper
  • 1 cup (about 150g) broccoli florets
  • 1 cup (about 150g) cauliflower florets
  • 1 cup (about 120g) snap peas or snow peas
  • 1 cup (about 130g) baby carrots
  • 1 cup (about 100g) cucumber slices
  • ยฝ cup (about 60g) grape tomatoes or cherry tomatoes
  • 2–3 celery stalks, cut into 3-inch pieces
  • Fresh parsley or dill for garnish (optional)
  • Fresh herb sprigs (rosemary or thyme) for vines (optional)

Instructions

  1. Make the dip first: In a small mixing bowl, combine 1 ยฝ cups sour cream, ยฝ cup mayonnaise, the ranch dressing mix, 2 tablespoons lemon juice, ยผ teaspoon smoked paprika, and โ…› teaspoon garlic powder. Whisk until smooth and fully combined. Taste and adjust seasoning if needed. Cover and refrigerate for at least 20 minutes to let flavors meld and thicken.
  2. While the dip chills, wash and dry all vegetables thoroughly. Cut broccoli and cauliflower into small, bite-sized florets. Slice cucumber into rounds about ยผ-inch thick. Cut celery into 3-inch pieces. Trim ends off snap peas. Leave baby carrots whole. Pat everything dry with a clean towel.
  3. Create the pumpkin face: Cut the orange bell pepper in half horizontally, about 1 inch from the top. Remove stem and seeds. Take the bottom half and use a small knife to cut a classic jack-o’-lantern face: two triangle eyes and a jagged mouth.
  4. Assemble the dip pumpkin: Fill a small round bowl (about 4-5 inches in diameter) with the chilled dip. Smooth the top. Carefully place the orange bell pepper face over the top of the bowl, cut side down, so it sits like a hat. Secure with a toothpick if needed (warn guests).
  5. Arrange the veggie patch: Place the dip pumpkin in the center of a large round platter. Arrange vegetables around it to look like a garden patch: start with broccoli and cauliflower as ‘bushes’ near the base, add snap peas in clusters like vines, group baby carrots like they’re growing, scatter cucumber slices, add grape tomatoes for pops of color, and tuck celery pieces for height.
  6. Add the vines and garnish: Arrange fresh herb sprigs (rosemary or thyme) around the base of the pumpkin to look like pumpkin vines. Sprinkle fresh parsley or dill over the vegetables for a ‘just picked’ look.
  7. Final check: Step back and look at the tray from a few feet away. Fill any empty spaces with extra vegetables to make it look abundant. Serve immediately or within 30 minutes.

Notes

The dip can be made up to 2 days ahead and refrigerated. Vegetables can be washed and cut the night before and stored in zip-top bags with a damp paper towel. Assemble the tray no more than 30 minutes before serving to prevent wilting. For a dairy-free version, use dairy-free sour cream and vegan ranch mix.
