  • 2 large Honeycrisp apples
  • 1/2 cup dried figs or dried apricots
  • 1/4 cup fresh grapes (red or green)
  • 4 oz prosciutto (thinly sliced, e.g., Boar’s Head or Del Duca)
  • 4 oz salami (Genoa or soppressata, sliced)
  • 1 cup mixed nuts (pecans, walnuts, or almonds, lightly toasted)
  • 1/2 cup crackers (water crackers, rosemary crackers, or gluten-free option)
  • 1/4 cup crispy chickpeas (optional)
  • 1/4 cup fig jam or honey
  • 1/4 cup olives (Castelvetrano or Kalamata)
  • Fresh rosemary or thyme sprigs (for garnish, optional)

Instructions

  1. Prep your board: Place your board or platter on a clean, dry surface. If using a wooden board, rub lightly with a cut lemon to prevent staining.
  2. Place the cheese: Unwrap the brie and place it whole on the board, slightly off-center. Optionally, score the top in a crosshatch pattern and drizzle with honey. Place aged cheddar (if using) on the opposite side, cut into thin slices or small cubes.
  3. Add the meats: Fold prosciutto slices into loose ribbons or waves and place near the brie. For salami, fold slices into quarters or create salami ‘flowers’ by folding five slices together.
  4. Prep the apples: Wash and dry the Honeycrisp apples. Cut into thin wedges (8-10 per apple). Squeeze a little lemon juice over the cut sides to prevent browning. Arrange in a fan pattern near the brie.
  5. Add the dried fruit and grapes: Scatter dried figs or apricots around the board in small clusters. Place grapes in small bunches or scatter individually.
  6. Fill in with nuts and crunchy elements: Sprinkle mixed nuts in empty spaces. Add crispy chickpeas (if using) in a small bowl or scattered around.
  7. Add the sweet and savory accents: Spoon fig jam into a small ramekin and place on the board. Add olives in another small bowl or scatter directly on the board.
  8. Fill in with crackers: Arrange crackers around the board, fanning them out in small groups near the cheese.
  9. Garnish and serve: Tuck fresh rosemary or thyme sprigs around the board for color and aroma. Serve immediately at room temperature.

Notes

For best results, serve at room temperature. Cut apples just before serving to prevent browning. If making ahead, prep ingredients separately and assemble within 30 minutes of serving. Toast nuts in a dry skillet for 3-4 minutes for extra flavor.
