Easy Crockpot White Chicken Chili with Cream Cheese

This creamy, comforting white chicken chili is made effortlessly in a slow cooker with chicken, white beans, corn, and cream cheese for a velvety broth. It’s a set-it-and-forget-it meal perfect for busy weeknights.

  • 1.5 lbs boneless, skinless chicken breasts (about 2–3 large)
  • 2 cans (15 oz each) white beans (Great Northern or cannellini), drained and rinsed
  • 1 cup frozen corn
  • 1 can (4 oz) diced green chiles
  • 1 medium yellow onion, diced
  • 3–4 garlic cloves, minced
  • 2 cups low-sodium chicken broth
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 8 oz cream cheese, softened and cut into cubes
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped
  • Optional toppings: shredded Monterey Jack cheese, diced avocado, tortilla chips, sour cream, sliced jalapeños

Instructions

  1. Place the chicken breasts in the bottom of a 5-6 quart slow cooker. Add the diced onion and minced garlic on top.
  2. Add the drained and rinsed white beans, frozen corn, and diced green chiles (with liquid). Stir gently to combine.
  3. Sprinkle the cumin, oregano, chili powder, salt, and pepper over the top. Pour in the chicken broth and stir gently to incorporate the spices.
  4. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is tender and shreds easily.
  5. Using two forks, shred the chicken directly in the pot. Stir it back into the broth.
  6. Add the cubed cream cheese and stir gently until completely melted and the chili turns creamy, about 2-3 minutes.
  7. Stir in the lime juice and fresh cilantro. Taste and adjust salt and pepper if needed. Serve hot with desired toppings.

Notes

For a thicker chili, cook uncovered for the last 30 minutes after adding cream cheese. If chili is too thin, mash some beans against the pot before adding cream cheese. For extra flavor, sear the chicken breasts in a hot skillet with oil before adding to the slow cooker. Soften cream cheese at room temperature for 20 minutes or microwave for 10-15 seconds for easier melting.
