  • ½ cup honey
  • ⅓ cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • Salt and pepper to taste
  • Optional: sliced green onions, toasted sesame seeds, red pepper flakes

Instructions

  1. Pat the chicken thighs dry with paper towels. Trim excess fat, season lightly with salt and pepper.
  2. In a medium bowl, whisk together honey, soy sauce, minced garlic, ketchup, rice vinegar, and sesame oil.
  3. Place chicken thighs in the slow cooker in a single layer. Pour the sauce over the top, coating each piece.
  4. Cover and cook on LOW for 4-5 hours or on HIGH for 2.5-3 hours. Flip the chicken halfway through cooking.
  5. When chicken is cooked through (internal temperature 165°F), remove to a plate using tongs.
  6. In a small bowl, mix cornstarch with cold water to make a slurry. Pour into the slow cooker with the juices. Turn heat to HIGH and whisk for 2-3 minutes until sauce thickens.
  7. Return chicken to the slow cooker, spoon thickened sauce over the top. Let sit for 5 minutes.
  8. Transfer to a serving platter, garnish with green onions and sesame seeds. Serve immediately.

Notes

For best results, use fresh garlic and low-sodium soy sauce. Avoid overcrowding the slow cooker. The sauce can be thickened with cornstarch slurry at the end. Leftovers keep in the refrigerator for up to 4 days or freeze for up to 3 months.
