  • 1/3 cup honey
  • 1/3 cup low-sodium soy sauce
  • 4 cloves garlic, minced (about 1 tablespoon)
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • Optional garnish: sesame seeds, chopped green onions, or fresh parsley

Instructions

  1. Mix the sauce: In a small bowl, whisk together the honey, soy sauce, minced garlic, ketchup, rice vinegar, and olive oil. Taste and adjust sweetness or saltiness as desired.
  2. Prep the chicken: Place chicken pieces in the slow cooker in a single layer. Pour the sauce evenly over the chicken, coating each piece.
  3. Cook low and slow: Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until chicken reaches an internal temperature of 165°F and shreds easily.
  4. Shred or slice: About 30 minutes before serving, remove chicken from slow cooker using tongs. Shred with two forks or slice into thick pieces. Reserve the liquid.
  5. Thicken the sauce: In a small bowl, mix cornstarch with 2 tablespoons cold water until smooth. Pour slurry into the remaining liquid in the slow cooker, stirring gently. Turn heat to HIGH, cover, and cook for 15-20 minutes, stirring once halfway, until sauce is thick and glossy.
  6. Combine and serve: Return shredded or sliced chicken to the slow cooker and toss in the thickened sauce. Let sit for 5 minutes. Serve immediately over rice, noodles, or steamed vegetables.

Notes

Pat chicken dry before adding to slow cooker to prevent watery sauce. Don’t lift the lid during cooking. If sauce isn’t thickening after 20 minutes, mix another teaspoon of cornstarch with a tablespoon of water and add it in. For a gluten-free version, use tamari or coconut aminos instead of soy sauce.
