  • 2 pounds boneless, skinless chicken breasts (about 34 breasts)
  • 1 cup buffalo hot sauce (recommended: Frank’s RedHot)
  • 1/2 cup unsalted butter, cut into cubes
  • 1 packet (1 ounce) ranch dressing mix
  • 4 ounces cream cheese, softened and cubed
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt (optional)
  • 12 slider buns (recommended: Hawaiian sweet rolls)
  • 8 slices provolone cheese (or mozzarella)
  • 1/4 cup melted butter
  • 1 teaspoon garlic powder (for brushing buns)
  • Optional toppings: shredded lettuce, diced tomatoes, crumbled blue cheese, sliced pickled jalapeรฑos, extra buffalo sauce drizzle

Instructions

  1. Place the 2 pounds of chicken breasts in the bottom of your slow cooker.
  2. In a medium bowl, whisk together 1 cup buffalo hot sauce, 1/2 cup cubed unsalted butter, 1 packet ranch dressing mix, 1 tablespoon garlic powder, 1 teaspoon onion powder, and 1/2 teaspoon black pepper. Pour this mixture over the chicken in the slow cooker.
  3. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the chicken shreds easily with a fork and reaches an internal temperature of 165ยฐF.
  4. Carefully remove the chicken breasts to a cutting board or large bowl. Use two forks or a hand mixer on low speed to shred the chicken. Return the shredded chicken to the slow cooker.
  5. Cut the 4 ounces of cream cheese into small cubes and add them to the shredded chicken in the slow cooker. Stir until the cream cheese melts completely into the sauce (about 5 minutes).
  6. Preheat your oven to 350ยฐF. Slice the 12 slider buns in half horizontally. Place the bottom halves in a 9×13 baking dish.
  7. Spoon the buffalo chicken mixture generously over the bottom buns. Top with the 8 slices of provolone cheese. Place the top buns on.
  8. In a small bowl, mix 1/4 cup melted butter with 1 teaspoon garlic powder. Brush this mixture over the tops of the buns.
  9. Bake for 10-12 minutes, until the cheese is melted and the tops are golden brown.
  10. Let the sliders rest for 2-3 minutes before cutting them apart. Serve immediately with your favorite toppings.

Notes

If the sauce looks too thin after adding the cream cheese, let it cook on low for another 15-20 minutes uncovered. If it’s too thick, add a splash of chicken broth or milk. Toasting the bottom buns for 2-3 minutes before adding the chicken prevents sogginess. The buffalo chicken mixture can be made up to 3 days ahead and stored in the refrigerator.
