Ingredients

Scale
  • 4 medium apples (Honeycrisp or Granny Smith recommended)
  • 1 sheet puff pastry (thawed)
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter (cut into small cubes)
  • 1/4 cup granulated sugar (for crust)
  • 1 tablespoon ground cinnamon (for crust)
  • 2 tablespoons unsalted butter (melted, for crust)
  • 1/2 cup brown sugar (packed)
  • 1/4 cup unsalted butter (for sauce)
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 375°F (190°C). Place rack in middle position.
  2. Peel apples and cut into 8 wedges each. Remove cores and seeds. Place in a bowl.
  3. In a small bowl, mix 1/4 cup granulated sugar and 1 teaspoon cinnamon for the filling.
  4. On a lightly floured surface, cut puff pastry into 8 equal squares (about 3×3 inches each).
  5. Place one apple wedge in the center of each pastry square. Sprinkle about 1/2 teaspoon of the cinnamon-sugar mixture over each wedge and top with a small cube of butter.
  6. Bring corners of pastry up and pinch together to form a package. Place seam-side down in a greased or parchment-lined 9×13-inch baking dish, leaving space between dumplings.
  7. In a small saucepan over medium heat, combine 1/2 cup brown sugar, 1/4 cup butter, and 1/2 cup water. Stir until butter melts and sugar dissolves. Bring to a gentle simmer, then remove from heat. Stir in vanilla and salt. Pour sauce over and around dumplings (about halfway up sides).
  8. Brush tops of dumplings with 2 tablespoons melted butter. Sprinkle remaining cinnamon-sugar mixture generously over tops.
  9. Bake for 25-30 minutes, until pastry is golden brown and puffed, and sauce is bubbling. If tops brown too quickly, tent with foil for last 10 minutes.
  10. Let cool in dish for 5-10 minutes before serving. Sauce will thicken slightly.

Notes

Keep puff pastry cold while working. Don’t overfill dumplings. For extra flavor, toast cinnamon sugar in a dry pan for 30 seconds before using. Double the sauce if you like extra. Let dumplings rest before serving for best texture.
