A refreshing and easy-to-make copycat Starbucks Pink Drink that comes together in under 10 minutes with simple ingredients. Perfect for summer gatherings or a quick treat.

Ingredients

Scale
  • 2 cups white cranberry juice
  • 1 cup canned coconut milk (full-fat)
  • 1/4 cup freeze-dried strawberries
  • 2 tablespoons simple syrup (or to taste)
  • Ice cubes (enough to fill glasses)
  • For the simple syrup (if making from scratch): 1/2 cup granulated sugar, 1/2 cup water

Instructions

  1. Make the simple syrup (if using homemade): Combine 1/2 cup granulated sugar and 1/2 cup water in a small saucepan. Heat over medium heat, stirring occasionally, until the sugar completely dissolves (about 3-4 minutes). Remove from heat and let cool completely.
  2. Prep the freeze-dried strawberries: Measure out 1/4 cup of freeze-dried strawberries. Roughly crush them with your hands, leaving some smaller pieces and some slightly larger ones for texture.
  3. Combine the liquid base: In a pitcher, pour 2 cups of white cranberry juice and 1 cup of canned coconut milk. Stir well with a long spoon.
  4. Add the strawberries and sweetener: Add the crushed freeze-dried strawberries and 2 tablespoons of simple syrup. Stir gently but thoroughly. Taste and adjust sweetness if desired.
  5. Chill the mixture: Refrigerate the pitcher for at least 30 minutes to allow flavors to meld.
  6. Prepare your glasses: When ready to serve, fill glasses with ice cubes. Optionally, add fresh strawberry slices to the glass.
  7. Pour and serve: Give the pitcher one last stir, then pour the pink drink over the ice. Fill each glass about three-quarters full.
  8. Garnish options: Add a fresh strawberry slice on the rim, a tiny mint sprig, or a slice of lime for color.

Notes

Shake the coconut milk can well before opening to ensure even consistency. For best results, chill the drink for at least 30 minutes before serving. The base (without ice) keeps in the refrigerator for up to 3 days. For a lower sugar option, skip the simple syrup or use a sugar-free alternative.
