  • 24 slices turkey pepperoni
  • 48 buttery crackers (square or round, such as Ritz or Club crackers)

Instructions

  1. Slice the cheese: Take your block of sharp cheddar and slice it into pieces about ¼-inch thick. If using a cookie cutter, cut the slices into rounds. If not, cut them into small squares roughly the size of your cracker. You’ll need about 24 pieces of cheese.
  2. Prep the pepperoni: If your turkey pepperoni slices are large, use the same cookie cutter to punch out small rounds. If they are already small, leave them whole. You’ll need about 24 slices of pepperoni.
  3. Assemble the stackers: Lay out half of your crackers on a clean work surface. Place one piece of cheese on each cracker. Top the cheese with one slice of turkey pepperoni. Finally, place another cracker on top to create a little sandwich.
  4. Press gently: Give each stacker a very gentle press with the palm of your hand. This helps the flavors meld and keeps everything together. Don’t squish them—just a light, even pressure.
  5. Store: Place the stackers in a single layer in an airtight container. If you need to stack them, place a small square of parchment paper between the layers to keep them from sticking. They are ready to eat immediately, but they get even better after an hour in the fridge.

Notes

For best results, use cold cheese for clean slicing. If cheese gets too soft, pop it in the freezer for 5 minutes. To keep crackers crunchy, assemble stackers no more than 24 hours in advance.
