This easy candy corn popcorn bark combines salty popcorn, creamy white chocolate, and chewy candy corn for a quick, crowd-pleasing Halloween treat that comes together in under 15 minutes.

  • 8 cups plain popped popcorn (about 1 bag microwave popcorn or 1/3 cup kernels)
  • 12 ounces white chocolate chips or melting wafers
  • 1 ½ cups candy corn
  • ½ cup candy pumpkins or autumn M&Ms (optional)
  • ¼ teaspoon salt (flaky sea salt preferred)
  • 1 tablespoon coconut oil or vegetable shortening (optional, for thinning chocolate)

Instructions

  1. Prep your popcorn. Pop 8 cups of popcorn using your preferred method. Spread it out on a large baking sheet and let it cool completely—about 5 minutes. Pick out any unpopped kernels.
  2. Line your baking sheet. Lay a piece of parchment paper or a silicone mat on your largest baking sheet.
  3. Melt the white chocolate. Place the white chocolate chips or wafers in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly between each round. It usually takes about 1 ½ to 2 minutes total. Stop when most of the chips are melted and stir until smooth. If the chocolate seems too thick, stir in 1 tablespoon of coconut oil to thin it out.
  4. Combine the popcorn and chocolate. Pour the melted white chocolate over the cooled popcorn in a large mixing bowl. Gently fold with a spatula until every piece of popcorn is coated.
  5. Spread it out. Transfer the chocolate-coated popcorn to your prepared baking sheet. Spread it into an even layer, about ½ to ¾ inch thick.
  6. Add the candy corn. While the chocolate is still wet and sticky, sprinkle the candy corn evenly over the top. Press them gently into the chocolate so they stick. Add the candy pumpkins or M&Ms if using. Sprinkle with flaky sea salt.
  7. Set the bark. Place the baking sheet in the refrigerator for 20-30 minutes, or until the chocolate is completely firm and set. If in a hurry, 15 minutes in the freezer works too.
  8. Break it up. Once the chocolate is fully set, lift the parchment paper off the baking sheet. Break the bark into irregular pieces with your hands.
  9. Serve or store. Transfer the pieces to a serving platter or store them in an airtight container.

Notes

For best results, use unsalted or lightly salted popcorn and let it cool completely before adding chocolate. Avoid heavily buttered popcorn. White chocolate burns easily—microwave in short bursts. Press candy corn gently into the chocolate so it sticks. Store in an airtight container at room temperature for up to 5 days. Freeze for up to 2 months.
