This Easy Candy Corn Popcorn Bark is a quick, no-bake treat that combines crunchy popcorn, creamy white chocolate, and chewy candy corn. Ready in just 10 minutes, it’s the perfect last-minute dessert for parties and gatherings.

Ingredients

Scale
  • 8 cups plain popped popcorn (about 1 bag of microwave popcorn, slightly salted)
  • 12 ounces white chocolate chips or melting wafers (e.g., Ghirardelli or Wilton)
  • 1 cup candy corn (classic Brach’s or autumn mix)
  • 1/2 cup salted peanuts (optional)
  • 1/4 teaspoon flaky sea salt (e.g., Maldon)

Instructions

  1. Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
  2. Pop 8 cups of plain popcorn. Remove any unpopped kernels and spread the popcorn in a single, even layer on the prepared baking sheet.
  3. Place white chocolate chips in a large microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until smooth (about 1.5 to 2 minutes total). Do not overheat.
  4. Pour melted white chocolate over the popcorn. Gently fold with a rubber spatula until evenly coated. Add candy corn and peanuts (if using) and fold again until distributed. Work quickly.
  5. Spread the mixture into an even layer about 1/2 to 3/4 inch thick. Sprinkle flaky sea salt evenly over the top.
  6. Let the bark set at room temperature for about 30 minutes, or refrigerate for 15 minutes if in a hurry.
  7. Once completely set and firm, lift the parchment paper and break the bark into irregular 2- to 3-inch pieces. Serve at room temperature.

Notes

Keep all equipment dry to prevent white chocolate from seizing. If chocolate seizes, add 1 teaspoon of coconut oil and stir vigorously. For best texture, do not refrigerate long-term. Store in an airtight container at room temperature for up to 5 days. Can be frozen for up to 2 months.
