  • 2 cups cooked, shredded chicken (rotisserie chicken works great)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo wing sauce (Frank’s RedHot recommended)
  • 1/2 cup ranch dressing
  • 1/2 cup shredded cheddar cheese (sharp cheddar recommended)
  • 1/4 cup crumbled blue cheese (optional)
  • 1 bag tortilla scoops

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Shred your chicken. If using a rotisserie chicken, remove the skin and bones, then shred the meat with two forks into small, bite-sized pieces.
  3. Soften the cream cheese by letting it sit on the counter for 20 minutes, or microwaving it for 15-20 seconds.
  4. In a medium bowl, combine the softened cream cheese, buffalo wing sauce, and ranch dressing. Beat with a hand mixer on medium speed until completely smooth and well combined.
  5. Fold in the shredded chicken until every piece is coated.
  6. Fold in the shredded cheddar and crumbled blue cheese (if using). Reserve a small handful of cheddar for the top.
  7. Transfer the mixture to a 9×9 inch baking dish or small oven-safe skillet. Spread evenly with a spatula and sprinkle the reserved cheddar on top.
  8. Bake for 20-25 minutes, until the edges are bubbling and the top is lightly golden.
  9. Let it rest for 5 minutes to set up slightly.
  10. Serve immediately with tortilla scoops.

Notes

For best results, use room temperature cream cheese to avoid lumps. Don’t overbake; pull the dip when edges are bubbling and center is just starting to show movement. The dip can be assembled ahead and refrigerated overnight; add 5-10 minutes to baking time if starting from cold. For extra heat, add more hot sauce to taste. To double the recipe, use a 9×13 inch dish and add 10 minutes to baking time.
