This easy apple cider mimosa is a simple, three-ingredient fall brunch cocktail that comes together in under 2 minutes. It’s the perfect balance of tart apple cider and dry sparkling wine, with a warm cinnamon finish.

  • 1 cup (240 ml) apple cider, chilled
  • 1 bottle (750 ml) Prosecco or Champagne, chilled
  • Cinnamon sticks (1 per glass)
  • Fresh orange slices (1-2 per glass)
  • Optional: 1 teaspoon maple syrup or honey per glass
  • Optional: 1 star anise per glass
  • Optional: 1 fresh rosemary sprig per glass
  • Optional: 1 ounce (30 ml) apple brandy or bourbon per glass

Instructions

  1. Chill the apple cider and prosecco thoroughly (at least 4 hours in the fridge, or 30 minutes in the freezer).
  2. Wash and slice oranges into thin rounds (about ¼ inch thick). Cut a small slit in each slice to sit on the rim.
  3. Fill each champagne flute about one-third full with chilled apple cider (about 2 ounces or 60 ml).
  4. Slowly pour chilled prosecco over the back of a spoon into the glass to preserve bubbles, filling to about 90% full (roughly 1 part cider to 2 parts prosecco).
  5. Gently stir once or twice with a cinnamon stick or long spoon to combine without losing carbonation.
  6. Garnish each glass with an orange slice on the rim and a cinnamon stick. Add optional star anise or rosemary if desired.
  7. Serve immediately. For a pitcher batch, combine 2 cups (480 ml) apple cider with 1 bottle (750 ml) chilled prosecco in a large pitcher, stir gently, and pour into glasses. Drink within 20 minutes.

Notes

Use dry (brut) sparkling wine to balance the sweetness of the cider. For non-alcoholic version, substitute prosecco with sparkling apple cider or ginger ale. Serve immediately as bubbles dissipate quickly. For best results, chill all ingredients thoroughly before assembling.
