  • 1/2 cup sour cream (for football laces)
  • 1/4 cup fresh cilantro leaves, roughly chopped (for garnish)

  • Fresh vegetable sticks (celery, carrot, cucumber, bell pepper strips)

Instructions

  1. Prepare your base layer: In a medium bowl, combine the softened cream cheese, 1/2 cup sour cream, ranch seasoning mix, and chopped chives. Mix until smooth and well-combined. Taste and adjust seasoning.
  2. Cook and prep the bacon: Cook your bacon until extra crispy. Let it cool completely, then crumble or dice it finely.
  3. Prep your vegetables: Dice the Roma tomatoes, removing the seeds and excess pulp first. Dice the green bell pepper and red onion into small, even piecesโ€”about 1/4 inch. Drain and pat dry the black olives. Combine all vegetables in a bowl and set aside. Drain and chop pickled jalapeรฑos and pepperoncini now too.
  4. Shape the football base: On your serving platter, use an offset spatula to spread the cream cheese mixture into a football shape. Start with a mound in the center, then shape it into an oval about 12 inches long and 8 inches wide at the center. Taper the ends to points. The layer should be about 1/2 inch thick.
  5. Add the second layer: Sprinkle the diced bacon and chopped pecans evenly over the cream cheese layer. Gently press them into the surface so they stick. Add the shredded cheddar cheese on top, pressing gently.
  6. Add the third layer: Spoon the tomato, bell pepper, red onion, and olive mixture over the bacon layer. Spread it evenly, but don’t press too hard.
  7. Add the fourth layer: Sprinkle the shredded Mexican blend cheese evenly over the vegetable layer. Distribute the chopped pickled jalapeรฑos and pepperoncini over the cheese.
  8. Add the fifth layer and decorate: Dollop the remaining 1/2 cup sour cream into a piping bag or zip-top bag with a small corner snipped off. Pipe two parallel lines down the center of the football, about 2 inches apart. Then pipe short perpendicular lines between them to create the football laces (about 4-5 laces). Sprinkle the fresh cilantro around the edges of the board.
  9. Arrange the accompaniments: Surround the football with crackers, tortilla chips, vegetable sticks, and baguette slices. Arrange them in groups rather than scattering randomly.
  10. Final touches: If you want, sprinkle a little extra shredded cheese around the outline of the football to define the shape. Add a few whole olives or pickled jalapeรฑos for visual interest.
